Gluten free  |  Dairy Free

Choose firm fish fillets such as Snapper, Perch, even Tuna or Salmon work for this dish. The fish is ‘cooked’ by the lime juice marinade.

450g firm white fish

1/2 cup lime juice

2 tablespoons fish sauce

125ml coconut cream

2 tablespoons finely red onion

1 large tomato, finely diced

1/2 cup finely diced cucumber

1 tablespoon chopped coriander

1 long red chilli (optional), finely diced

Finely dice the fish and place into a mixing bowl with the lime juice. Leave to marinate for a minimum of 4 hours, or overnight in the refrigerator.

Once the fish is opaque, drain.  Mix the fish with all the remaining ingredients and serve in lettuce cups.
